Stilton and pear on a dark Autumn evening

This recipe was recommended to me by a friend and I do trust her blindly when it comes food. The stilton and pear would seem an unusual combination but they complement each other perfectly in the tart. Yummm! Recipe can be found on Helen Graves’s website.

From my own observations:
1) do add port or wine when frying the shallots;
2) tart tastes even better on the next day!
